Cheese n Mac with Chorizo and Manchego

Cheesy, carb-heavy, spicy, savory and whole lot of lusty.


      • 12 oz Macaroni
      • Salt to Taste
      • 12 oz Evaporated Milk
      • 6 oz Grated Medium Cheddar Cheese
      • 6 oz Grated Spanish Manchego Cheese
      • 1 Cup Chorizo Sausage, cooked

  1. In a large pot add the macaroni, a good pinch of salt and enough cold water to just cover
  2. Bring it to a boil and cook the pasta stirring constantly until the water is almost evaporated and the macaroni is al dente
  3. Add the evaporated milk and bring to a boil. Add the cheeses and the cooked chorizo and turn the heat down to low cooking the pasta for a few minutes longer to melt the cheese and create a creamy sauce
