Cheese n Mac with Chorizo and Manchego
Cheesy, carb-heavy, spicy, savory and whole lot of lusty.
Ingredients
- 12 oz Macaroni
- Salt to Taste
- 12 oz Evaporated Milk
- 6 oz Grated Medium Cheddar Cheese
- 6 oz Grated Spanish Manchego Cheese
- 1 Cup Chorizo Sausage, cooked

Method
- In a large pot add the macaroni, a good pinch of salt and enough cold water to just cover
- Bring it to a boil and cook the pasta stirring constantly until the water is almost evaporated and the macaroni is al dente
- Add the evaporated milk and bring to a boil. Add the cheeses and the cooked chorizo and turn the heat down to low cooking the pasta for a few minutes longer to melt the cheese and create a creamy sauce
