Pancetta, Caramelized Onion and Egg Baked Avocado

Top of the morning to ya ;)


    • 2 Medium Ripe Avocados
    • 4 Eggs
    • ¼ Cup Pancetta, sliced and chopped
    • 1 Cup Onion, finely sliced
    • 1 Tbsp Vegetable Oil
    • 1 Tsp Thyme
    • Salt and Pepper to taste
    • 4 Tsp Umé by FlavürLust 
    • Parmesan Cheese to garnish


  1. Preheat your oven to 425C
  2. In a large pan, heat the oil over medium heat and add the onions and thyme. Cook for 15-20 minutes or until soft and caramelized. Remove and reserve
  3. Cut the avocado in half and remove the pit
  4. Using a large spoon, spoon out some of the avocado so there is more space for the egg and fillings
  5. Place each avocado skin side down into a muffin pan so that it sits and doesn’t move
  6. Spoon some caramelized onions into each avocado, crack an egg into each one, sprinkle with pancetta and cheese
  7. Season with salt and pepper
  8. Drizzle 1 tsp of Umé by FlavurLust onto each avocado
  9. Bake in the oven for 15 minutes or until the egg is cooked
