Pancetta, Caramelized Onion and Egg Baked Avocado

Ingredients
- 2 Medium Ripe Avocados
- 4 Eggs
- ¼ Cup Pancetta, sliced and chopped
- 1 Cup Onion, finely sliced
- 1 Tbsp Vegetable Oil
- 1 Tsp Thyme
- Salt and Pepper to taste
- 4 Tsp Umé by FlavürLust
- Parmesan Cheese to garnish
Method
- Preheat your oven to 425C
- In a large pan, heat the oil over medium heat and add the onions and thyme. Cook for 15-20 minutes or until soft and caramelized. Remove and reserve
- Cut the avocado in half and remove the pit
- Using a large spoon, spoon out some of the avocado so there is more space for the egg and fillings
- Place each avocado skin side down into a muffin pan so that it sits and doesn’t move
- Spoon some caramelized onions into each avocado, crack an egg into each one, sprinkle with pancetta and cheese
- Season with salt and pepper
- Drizzle 1 tsp of Umé by FlavurLust onto each avocado
- Bake in the oven for 15 minutes or until the egg is cooked
